Wrestling Recipes Week 6 - Xtreme Butternut Bonanza

Finding quick and healthy meals can be troublesome for a lot of people as there is simply not enough time in the day for most folks after a long day of work. That was until the "Charismatic Enigma" Jeff Hardy submitted his tasty and healthy dish to WWE Magazine for the March 2007 issue. In addition to being tasty and healthy, this dish takes less than 15 minutes to prepare and all one needs is three simple ingredients.

SOUTHERN FRIED SQUASH

INGREDIENTS:
*2 large butternut or yellow squash
*1/2 cup of cornmeal
*Cooking oil

DIRECTIONS:
1) Heat cooking oil in large skillet.
2) Slice squash into several pieces and place in a bowl with cornmeal.
3) Cover bowl and shake until squash is fully coated with cornmeal.
4) Carefully place slices of squash into skillet.
5) Cook for 10 minutes or until browned.
6) Stir occasionally.
7) Add salt and pepper to taste.
